Now there is a very good reason why you should do it… Naples’ pizza has won Unesco ‘intangible’ status!
First information about ‘Pizza Napoletana’ are between 1715 and 1725 and come from Naples. The first type of Neapolitan pizza is called Marinara, which is basically without cheese, only with tomatoes and herbs. When in 1889 king Umberto I and queen Malgorzata came to visit Naples, baker Rafaelle Esposito created on this occasion a particular kind of pizza: unique because with red tomatoes, white cheese and green herbs reminded the colors of the Italian flag. This is how was created Pizza Margherita.
In 1989 was founded Associazione Verace Pizza Napoletana (VPN), which aims to protect a tradition of authentic Neapolitan pizza. There is also a policy which contains all the principles to respect to be able to call pizza ‘original and authentic’.
HOW PIZZA IS MADE
First of all, the uniqueness of Neapolitan pizza is due to crust which has to be manufactured using dough similar to that used for bread – soft and elastic, always handmade.
The tradition of Neapolitan cooking provides for two variants of pizza when it comes to ingredients
- Pizza Marinara: tomatoes, garlic, oregano, oil;
- Pizza Margherita: tomatoes, mozzarella STG, mozzarella di bufala campana or Fior di latte, basil and oil.
Apart from these two variants, there are also other types of pizza widespread all over the world, like for example:
Capricciosa (con mushrooms, globe artichokes, and boiled ham);
Quattro formaggi (different types of cheese)
Diavola (pieces of pepperoni)
According to the definition of the international standard for maintenance of the status ‘Pizza Napoletana’, baking must occur in a wood-fired oven at about 450 degrees for 60 seconds.
